quick review for the bar owners who have lost their way in this gritty & greedy industry!
Dear Bar Owner,
Not now or ever should you expect, imply or ask your bartenders to tip you if you jump behind the bar and give them a hand. This is a very uncommon practice in today's finer establishments, but for the local neighborhood and dive bars, you will still see the Owner help out every now and then.
Bar Owners, helping your bartenders is okay if you under staffed for the shift, but asking them for their tips is not okay. Too many small bar owners have never actually bar tended before, which is a topic for another blog, however, they see the tips being thrown around on a busy night and their eyes start to get big! I'm sure they calculate and come up with ways to off set their overhead costs by imagining themselves bar tending and pulling in $500-$1000 on a busy night, but the reality is, that's not what bar owners do. Focus on how to create the best working environment for your staff, come up with ways to give back to your customers and continue to work out the kinks from the back. But never, come to the FOH - step behind that bar - and assume you will be tipped out. It's just not right and your bartenders will resent you for it and soon will make their way elsewhere.
